Raisinée - also called cooked wine - is the result of a very old practice, a kind of culinary alchemy: in autumn, pear or apple juice is cooked in large pots over wood fires for several hours. The result is a concentrated juice that used to replace sugar. Today, it is served with vanilla ice cream, meringues and pancakes or to make delicious pastries like the famous "tarte à la raisinée"
